WHere is an easy take on a drink from our latest menu. This is a party-sized premix that's loaded with tastes of the festive period, rendering it excellent for hosting a festive gathering. Any leftover citrus syrup to use in brunch beverages, sweets, or to mix another batch of this cocktail.

For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put every components into a pot, heat until it reaches a light boil, stirring to dissolve. Next, remove from the heat and let it to cool down completely. Decant to a clean bottle, cap it keeping it chilled, it will last for up to one month.
For the Batch Mix: Mix the specified liquids in a big jug, let it rest for 60 minutes, then filter it preferably using cheesecloth, to ensure it's perfectly clear.
For serving: Add 85ml of the batch mix into a cocktail shaker packed with ice, and stir lightly for a minute to cool it down. Filter into a frosted cocktail glass or equivalent, decorate with a few cranberries adding the final touch using a brief mist with the mandarin essence over the drink.
